This is one variation, but remember that stuffed peppers can be prepared in a variety of methods and tastes to add variety to your menu, while sticking to healthy bariatric recipes and bariatric nutrition. Ingredients:
- 1 bell pepper
- 4 oz of lean cut chicken breast or lean ground chicken
- 1/2 cup of spinach
- 1/4 cup of brown rice
- 1 thinly sliced shallot
- 1 tablespoon olive oil
- 1 teaspoon chopped garlic
- salt and pepper, to taste
Instructions:
- Remove the stem and seads
- Cook the pepper in boiling salted water for 3 minutes to soften, then let dry on a towel
- Prepare the rice per directions
- Sauté the onion and garlic in the olive oil in a small nonstick skillet until golden and remove from burner to cool
- Brown the diced chicken breast or ground chicken
- Mix the spinach, onion and garlic mixture, and rice in with the sautéed chicken
- Season with salt and pepper
- Add mixture to pepper
- Bake at 375 for 20 minutes
