However, traditional pies are heavy with sugars and carbohydrates, and not friendly to a bariatric diet. We found a healthy twist on traditional pumpkin pie to help you enjoy the holidays with comfort and confidence this year. Try this “No Pie Pumpkin Pie” to share healthy recipes for bariatric patients this year.

Ingredients:

  • 1 can pumpkin (do not use pumpkin pie mix)
  • 1/2 cup almond milk
  • 4 eggs
  • 2 tsp vanilla
  • 1/4 cup of Splenda (or a sugar-free alternative)
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice

Instructions:

Add ingredients to the blender in this order to get best results:

  1. Preheat your oven to 350 degrees. Line an 8″ baking or pie dish with cooking spray.
  2. Combine the pumpkin, eggs, milk, vanilla, sweetener and spices.
  3. Spread the mixture in an even layer in the baking dish.
  4. Bake for 40 minutes or until a knife inserted into the center comes out clean. Allow pie to cool.
