Healthy Bariatric Recipes: Holiday Deviled Eggs

Eggs are a high-protein option that you can enjoy in many different varieties. And holiday-themed deviled eggs are no exception. This recipe avoid the fats and extra sugars in mayonnaise, but packs the extra protein with Greek yogurt.

Ingredients:

  • 6 hard boiled eggs
  • 1/4 cup tablespoons Greek yogurt
  • 1 tsp Dijon Mustard
  • Salt and pepper
  • Fresh chives, parsley, and/or smoked paprika (for holiday cheer and flavor!)

Instructions:

  1. Peel hard cooked eggs, slice in half length-wise and scoop out yolks into a small bowl.
  2. Mash yolks with a fork until smooth.
  3. Stir in the yogurt, dijon mustard, salt, and black pepper.
  4. Scoop a teaspoon of the creamy yolk mixture into each egg white half and arrange on a plate.
  5. Garnish with a sprinkle of chopped chives, parsley, and/or smoked paprika.
  6. Cover with plastic wrap and chill.
