When you think of a summer cookout, burgers and hotdogs probably come quickly to mind. After bariatric surgery, red meats might be too fatty for your new anatomy to digest. But you do not need to go hungry. There are lots of summer cookout recipes that will keep you enjoying the fun and the rewards of your bariatric surgery. Some bariatric-friendly options include barbecue chicken, grilled salmon, and veggie burgers. Today, let’s look at juicy chicken kebabs for a healthy recipe for bariatric patients to share at the next summer cookout.

Ingredients:

  • 8 oz skinless chicken breasts (marinated)
  • 1 cup bell peppers (add color for summer vibes)
  • 1/2 cup each zucchini, sliced red onion, and/or mushrooms

Marinade:

  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp all-purpose seasoning
  • 1 Tsp of don mustard
  • Salt & peper to tast

Instructions:

  1. Combine marinade ingredients in a small bowl and mix
  2. Cut chicken breasts into 1” cubes
  3. Pour marinade over chicken and stir until marinade evenly coats the chicken (marinade 2 hours to overnight)
  4. Cut bell peppers, zucchini, red onion and/or mushrooms into slices
  5. Thread ingredients onto skewers
  6. Grill kebabs for 12-15 minutes until chicken is cooked all the way through
