Healthy Bariatric Recipes: Baked Egg Muffins

Ingredients:

  • 1 onion, chopped
  • 6 eggs
  • 1/4 cup red bell pepper
  • 1 cup spinach, chopped
  • 8 oz chicken, diced/minced
  • 3 slices of low fat cheese
  • salt & pepper to taste (optional)

Instructions:

  1. Preheat oven to 350° and lightly grease 6 muffin cups or line with paper muffin liners
  2. Heat a large skillet over medium-high heat and stir in chicken, cook and stir until chicken is evenly browned, about 10-15 minutes
  3. Beat eggs in a large bowl. Stir in onions, red pepper, spinach, salt and pepper. Mix in chicken and cheese. Spoon 1/3 cup into each muffin cup.
  4. Bake in pre-heated oven until a knife inserted near the center comes out clean, about 20-25 minutes
