Healthy chicken nugget recipe:
- Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup almond flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/4 cup coconut milk
- 2 tbsp coconut oil
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, mix together almond flour, paprika, garlic powder, onion powder, thyme, salt, and pepper.
- Pour coconut milk into a separate shallow bowl.
- Dip each chicken breast in the coconut milk, then dredge it in the almond flour mixture, shaking off any excess.
- Heat coconut oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for 3-4 minutes on each side, until golden brown.
- Transfer the chicken breasts to the prepared baking sheet and bake for 12-15 minutes, until the internal temperature reaches 165°F (74°C).
